I have thought about doing this but it would be a DRASTIC change for

me since I m a bread and pasta lover. Does anyone know if Spelt is

gluten free??

Spelt is not gluten free. You can eat corn and rice pasta though. I like brown rice pasta more than regular pasta.

Well there goes my precious bread! LOL I know there are gluten free

bread alternatives. I will just have to do some research to find out

about them. the whole idea of a gluten free diet is scary to me

right now though, like I'll never be able to enjoy a meal again.

Being gluten free really is easy once you realize which foods have gluten in them. You’ll need to become a label reader. Eating out is always a challenge but can be done if you ask questions prior to ordering. There are lots of good gluten free cookbooks out there. I bake bread for my daughter who is a celiac and it is much better than store bought bread any day.

It's good to hear from you! I was wondering if you could do something

for us, and I apologize for asking because I know you have done this

before, but could you provide a list of foods, or some links that

provide resources for gluten free foods?

I know you have mentioned things here and there...I probably need to

go back through the archives and write down everything you said, and

then create a file for those of us who want to pursue a gluten free

life.

But I myself am considering going gluten free for awhile to see what I

will feel like. I still haven't gotten those blasted tests that I

should probably go get, to see where my Hashimoto's is on the map. In

the meantime, I am looking at going gluten free, just because I know

it has helped you and Kathy so much.

Thanks --or anyone else who wants to tackle this job--Kenda, you

also seem to have alot of good info on this, and Kathy, you too. We

need you " gluten free girls " to rally and simplify this thing! For

some reason, going gluten free seems burdensome, but you make it look

too easy!

I've been googling on gluten free but have not had much luck finding a

simple list. Does anyone have a good resource for a list of foods

containing or not containing gluten??

Patty, to start Dangerous Grains and Against the Grain are excellent books, Sully's Living Without magazine is excellent, and www.glutensolutions.com and www.glutenfreemall.com are excellent sites for ordering foods. I love Kinnkinnick's www.kinnkinnicks.com breads, esp the Italain White bread found on site or at most health food stores in freezer section, they also have great pizza crusts and doughnuts for Tyler-and I cannot live without Tinkeyata pasta's are excellent! They are available at both food sites above, not so much at stores yet. Pretty much start off eating like a south beach diet , mostly fruits and veggies as you do, and incorporate the gluten free breads and pastas' when needed. I didnt start baking until 9 months into the diet, they say learning how to spot proper ingredients and reading them right, changing your brands (like progresso and classico notw clearly list if it has wheat or gluten in it) as well as well as changing your diet, is enough to tackle on by itself, then go into baking months later when you have that down. One day at a time thing! I also have plently of string cheese and veggies and corn or plain potato chips, and lots of fruit , and nuts on hand for snacks. I make my lunch a big dark green salad everyday, so that eases 1/3 of my meals with no worries! For dinner Ill have organic grilled chicken, beef or fish, with veggies, you can have potatos or rice and maybe a scoop pf ice cream if naughty. Just read. Go to celiac sites and print up ingredient lists, ect. What to look for. Its realy not that hard, eating out can be frustrating at first. So I simply didnt. Hi Patty,

I am going to send info on eating gluten free in a few different emails. I scanned them onto my computer and am having hard time combining them into one document.

The easiest way to start eating gluten free is to keep your diet simple, allowable grains, meat, chicken, turkey, nuts, and fruits and vegetables. You can’t go wrong if you eat simply and avoid the grains known to have gluten in them.

When shopping, always read labels and carry the list of allowable additives until you have them memorized. This is the place gluten is often hidden. Seemingly safe things like ice cream can have gluten in them. Do you have a good health food store nearby? I shop exclusively at Wild Oats and they have most of their gluten free items clearly marked which makes it so much easier, especially for my 12-year old daughter. If you don’t have a good health food store, the gluten free mall is a good place to order online.

I think that spelt is not gluten free. I am eating a bread that I

really like that is called potato millet. I try not to eat it that

much though because millet can affect thryoid. Also, julie turned

me on to some really good pasta by tinkyada---I buy their lasagna,

spaghetti and macroni noodles. They are made from brown rice and

taste awesome. You can't tell the difference!! However, I would

point out that in general, grains are that good for you and you

should reallyconcentrate more on raw food such as fresh vegetables

and some fresh fruit. Fruit should be less because most of us have

candida problems and the sugar in fruit is easily accessed by the

body. I have also added flax, olive and coconut oil to my diet and

can feel the difference. Good luck to you!

How are you taking the oils? I'd like to try adding those but don't know how I'd stomach them if I had to drink them straight. I am going to go to the store today to try to buy some gluten free pastas and possibly breads. I've just ordered my Garden of Life products for after the surgery, and also a special botanical infused tea that I will be living on all summer. I'm trying to have everything in place so that once I wake up from the surgery I will go right to the special dieting.

-I think that spelt is not gluten free. I am eating a bread that I really like that is called potato millet. I try not to eat it that much though because millet can affect thryoid. Also, julie turned me on to some really good pasta by tinkyada---I buy their lasagna, spaghetti and macroni noodles. They are made from brown rice and taste awesome. You can't tell the difference!! However, I would point out that in general, grains are that good for you and you should reallyconcentrate more on raw food such as fresh vegetables and some fresh fruit. Fruit should be less because most of us have candida problems and the sugar in fruit is easily accessed by the body. I have also added flax, olive and coconut oil to my diet and can feel the difference. Good luck to you!Hugskathy

Oh I just love bread period! I just bought my first gluten free rice loaf and rice pasta... man that was expensive!! Send over any recipes you have that are favorites. I am not big on nuts in bread though. And yes, I did receive the Celiac info thanks again!!

Hi all I finnaly stopped by a Asian Grocery store that I pass by every

day on the way to work. I left with two bags full of gluten free rice

products and only spend $14! They have about 10 different brands of

rice rolls for under a dollar a pack, pre cooked rice noodles, tons of

dry rice noodles, rice desserts, rice flour mixes, and 1lb. bags of

rice & tapioca flour for under 50 cents. I am including the name and

adress below.

I take 280 towards san jose get of on tenth street exit go right at

exit then the store is on the left just before the light.
