Guest guest
Hi all, Thanks for all the good information. 1) At the Stanford Celiac Conference in October, can you buy gf food from the vendors, or just taste? Is the pricing the same as it would be in a store? Are there frozen goods? 2) Does anyone have a good knowledge about (or know a good article about) the small intestinal damage that celiac disease can entail -- namely, I just read in a Sherry book on GI tract disorders that it takes 6 months for the small intestines to heal -- 6 months of gluten free eating. She then goes on to say that if you mess up and accidentally eat gluten, damage is done, and then you have to have another 6 months before your intestines are healed again. Is this really how it works? Only in severe cases?... 3) I have Googled for, and looked on Amazon for, a book about celiac disease treatment. I understand the diagnosis part, the removal of gluten from the diet, the tests for nutrient deficiencies and osteoporosis and other tests warranted with celiac disease... What I was looking for, is a book along the lines of Sherry ' books. She only talks peripherally about celiac disease in her GI tract book, but in those couple paragraphs she mentions ways to further promote healing of the small intestines. For instance, she says that chewing your food until it is liquid (lots of chewing in the mouth before swallowing) gives your stomach and intestines a bit of a rest and promotes nutrient absorption. She discusses how important it is to try to give your intestines a "rest" so they can heal. (In extreme cases, she recommends taking nutrients in from the rectum...) She talks about taking care with food combining to promote easier digestion... Is there anything like a Sherry ' book on celiac disease? Finally, following up on our earlier discussion, I thought I would mention that Sherry says the tests to determine whether you have celiac disease are not completely fault-proof, and she therefore recommends you just go off gluten for 6 months and see if you feel better. And she's an MD! But her book may be a bit dated. Thanks for any help, Best, Sue
