FIESTA'S CARROT BREAD 1 c. finely grated raw carrots ½ c. molasses ½ c. sugar 1 t. baking soda 1 T. melted shortening ½ c. boiing water 2 eggs 2½ t. baking powder 1 t. salt 1 c. corn FLOUR (I use Bob's redmill) 1 c. rice flour ½ c. corn MEAL 1 c. chopped walnuts 1 t. white vinegar Combine carrots, sugar, molasses, baking soda and shortening in a large bowl. Pour on boiling water and stir just to mix. Set aside to cool. Beat eggs with a fork and add to cooled carrot mixture. Stir in the baking powder, salt, walnuts and flours. Pour into a greased 8½X4½X2½ " pan. Let stand 5 minutes. Bake at 350° for one hour. Remove from oven and cool on wire rack.
