You can check online for Ethiopian dishes to go with injera - they do a lot

of mustard greens/kale/collars kind of dishes. They also do spicy chicken

stew - but you want vegetarian... I eat meat stews and curries with injera

and dosas. You might try any spicy bean stew or Indian-type dal as well as

salads, veggie stews - just about anything that has a sauce that will be

absorbed by the injera.

I usually make doro wat, a traditional chicken stew.

I make my own berberi to put in it. Berberi is a spice

mixture. They have many vegetable dishes. Here's a
