You can make a delicious vanilla extract by cutting up and scraping a

vanilla bean and adding the results to about 4oz of rum (whatever

darkness you like, and you want to use a decent quality unblended

rum.) It will be " done " in a week or two, and keeps indefinitely and

just gets better; vanilla doesn't seem to have any bitter

slow-extracting compounds so you don't have to worry about filtering it

to keep the flavor from turning like in some other extracts. Some

people even add a little more rum after using some up, since one bean

can do a lot of flavoring! If you ever get down to just the bean bits,

use that to make ice cream. I've stopped buying vanilla extract after

trying this.

There's also gf vanilla extract sold at natural/health food stores and

even Andronicos. It's called Flavorganics Organic Vanilla Extract. It

says gluten-free on the label, right under the picture of vanilla (or

other flavor). This company makes other extracts too.
