Last year I used the Kinnikinnick mix and it was ok but not outstanding (I also don't think I have time to get it shipped here or to drive to Harvest House). Anyone have a favorite GF yellow or white cake mix? I bought a Arrowhead Mills one and the Gluten Free Pantry one last night at WF and will be taste testing those. After I bought them, though, I remebered that I think we taste tested the Arrowhead Mills one last year and it wasn't too hot. I'd be especially interested in a mix producing a cake with good volume. Last year I had to make three layers to get a cake with decent height. I'm ok doing that again but if I can just use 2 that would be great. Last time I saw it was at the Sacramento Natural Food Coop. They sell it links can be found at their site online http://dowdandrogers.com/ They are made with hazelnut flour so they are a little gritty but they taste really good. We used two boxes to make a double layer cake. Also Arrowhead Mills makes a white cake mix that is okay but we found that we had to add a packet of unflavored gelatin to make it more moist and a little more sugar. It can be found in a lot of health food stores.
