He states that they do NOT use seperate pans for gluten free and they do NOT wash their pans after cooking each item. So basically the food is contaminated. He said that they believe that food is cooked at such a high temp there can be no contamination. We have gone round and round over this and he doesnt get it and I dont eat there. I tried pf changs twice several years ago and would not give it a third try - my gut wouldn't let me! Your brother is most likely not a celiac, so he would not personally understand the devastating effects of contamination. What I was told is that several of the dishes are always, natuarlly gluten free (e.g. the lemon chicken,and spicy shrimp). They always use the same pan to cook these, so, in theory, there shouldn't have been any gluten in there to begin with. That said, I usually don't order anything that I know uses soy sauce (even though they replace the normal soy sauce with gluten free soy sauce). The only thing I've reacted there is stuff that has soy sauce and I've eaten there many, many times. I'd love to hear some kind of offical word from P.F. I know that some individuals have educated specific PF Chang managers etc. about gluten free contamination etc, and have had more or less success at various locations. I still think a restaurant with a gluten free menu is better than a restaurant with no gluten free menu. Of course the ideal is eating at a gluten free cafe/ bakery, but since there aren't really enough to make this practical, I think the best solution may be to talk to managers etc. at specific locations and help them by providing the information that will allow them to prepare a safe meal for you. It's all subjective, but for what it is worth I haven't been severely glutened at any PF Chang's to date. After the last two times, which was twice in a month at two different locations I have stopped going. Guest guest Posted May 21, 2007 Report Share Posted May 21, 2007 You should explain to your brother (and other PF Changs folks) that even a very small amount of burned gluten (even as small as a few flakes from the bottom of the pan) can cause a stronger reaction than you would expect. This is because the burning process exposes the toxic glutamine protein but does not break it down; thus it can wreck havoc in a celiac gut even easier than unburned gluten (there is a very complicated chemist-speak explanation for this; check it out at: http://www.celiac.com/st_prod.html?p_prodid=1034). Your brother is most likely thinking of contamination along the lines of raw meat/salmonella etc. Gluten is different in that it is a tough protein that is very hard to break down, even in high heat.
