pf changs warning

My brother has worked at a couple of different pf changs over the past

few years. He states that they do NOT use seperate pans for gluten free

and they do NOT wash their pans after cooking each item. So basically

the food is contaminated. He said that they believe that food is cooked

at such a high temp there can be no contamination. We have gone round

and round over this and he doesnt get it and I dont eat there.

Thanks so much for this important information - many celiacs will be helped by your courageous post.

I tried pf changs twice several years ago and would not give it a third try - my gut wouldn't let me!

Your brother is most likely not a celiac, so he would not personally understand the devastating effects of contamination. Thank you again bringing the truth to light and helping so many.

Thanks Christy.

I've had this concern at times too. What I was told is

that several of the dishes are always, natuarlly

gluten free (e.g. the lemon chicken,and spicy shrimp).

They always use the same pan to cook these, so, in

theory, there shouldn't have been any gluten in there

to begin with.

That said, I usually don't order anything that I know

uses soy sauce (even though they replace the normal

soy sauce with gluten free soy sauce). The only thing

I've reacted there is stuff that has soy sauce and

I've eaten there many, many times.

I'd love to hear some kind of offical word from P.F.

Chang's on this.

my celiac 16 year old has eaten at 2 different PF Chang's in the Bay Area with no problem. So I don't get what this brother is talking about.See what's free at AOL.com.

clearly it is respective to each individual location - but as a rule,

unless they are all proven careful with their policies, they are all best

avoided.

I think safety probably depends on the location and the staff working

at the time you dine. I know that some individuals have educated

specific PF Chang managers etc. about gluten free contamination etc,

and have had more or less success at various locations. I still think

a restaurant with a gluten free menu is better than a restaurant with

no gluten free menu. Of course the ideal is eating at a gluten free

cafe/ bakery, but since there aren't really enough to make this

practical, I think the best solution may be to talk to managers etc.

at specific locations and help them by providing the information that

will allow them to prepare a safe meal for you.

It's all subjective, but for what it is worth I haven't been severely

glutened at any PF Chang's to date. Of course, whenever you go out to

eat, there are risks, unfortunately.

I have eaten at PFChangs many times and out of those times I was

glutned at least 6 times. After the last two times, which was twice

in a month at two different locations I have stopped going. If they

are going to promise a gf menu then I expect gf food! kc

You should explain to your brother (and other PF Changs folks)

that even a very small amount of burned gluten (even as small as a few flakes

from the bottom of the pan) can cause a stronger reaction than you would expect.

This is because the burning process exposes the toxic glutamine protein but

does not break it down; thus it can wreck havoc in a celiac gut even easier

than unburned gluten (there is a very complicated chemist-speak explanation

for this; check it out at: http://www.celiac.com/st_prod.html?p_prodid=1034).

Your brother is most likely thinking of contamination along the lines of raw

meat/salmonella etc. Gluten is different in that it is a tough protein

that is very hard to break down, even in high heat.
