Kate,

I had to make the breadmaker vs. standing mixer decision this winter

and I decided on a KitchenAid Artisan standing mixer. WAY more

versatile for the things I'll be using it for. I see no reason to have

a breadmaker - Making bread just really isn't that hard, especially

with a mixer.

I haven't used my mixer yet, as it's waiting for me in New York, but I

know from using other peoples' that it is well worth investing in the

" real deal " .

Cuisinarts are amazing - I use one almost every day. But they are not a

replacement for a mixer and can't handle the amount of dough that a

standing mixer can and to me it seems that if anything they are messier

to clean up, not less messy.

I definitely couldn't do without my Cuisinart, but I can't imagine using it for breadmaking.

-The bread man bread machine from BBB for$79... Makes 1 to 2 lbs and

can make batter breads.....ie banana..... You put the ingredients in

push a few buttons and in 59min to 2 hours depending on the bread...

I would actually vote for the kitchenaid mixer, but most GF cookbook

authors recommend using the paddle accessory for mixing gluten free

bread rather than the dough hook, due to the different properties of

GF flours. I have a bread machine and enjoy it very much, but the

mixer is essential- I can make pizza, bread, cookies- all kinds of

things with it, and a wimpy mixer just can't handle our heavy GF flours.

I've been making GF bread for 15 years using a bread machine. I'm only

on my second one, and I expect it'll be my last. It's the programmable

one from -Sonoma that's recommended by the Gluten-Free Pantry.

(I followed the programming instructions for GF bread on the GF Pantry

website when I got it, and never had to do it again.) I call my bread

MollyBread, and I'm happy to share the recipe with anyone who'd like

it. Write to me at:

debbie@...

and I'll send it to you. Bette Hagman always advocated making bread by

hand (or mixer), but my GF kids (now young adults) love what comes out

of our bread machine. And it couldn't be simpler.
