Re flourless chocolate cake, in general: often the pan is floured, even though the cake itself is flourless. So -- be cautious.

Uh, where is the cocoa powder? It doesn't say how much you used.

I just invented a grain-free, fat free, almostsugarless chocolate cake. It was pretty good, but Ithink next time I'll add more cocoa powder. Walnutswould be good, too. This would make a GREAT base foran ice cream cake. I didn't really measure theingredients, but here's a rough idea:.5 c. applesauce2 eggs, separated3 T. tapioca flour.5 t. salt1 t. baking soda3 packets of Stevia1 T. sugar1 t. vanillausing an electric hand mixer, mix applesauce, eggyolks, tapioca, salt, soda, sugar and vanilla until itis smooth, like cake batter. Add Stevia AS you areblending, to avoid lumps. Set aside.Whip egg whites until stiff. Fold into batter.Pour into greased pan (I used a small, 8x4 loaf pan)and cook at 350 for about 45 min, or until toothpickcomes out clean. D'oh! Sorry 8^P I used 2 heaping tablespoons, but I

think 3 would be better. If you can tolerate coffee

(I don't very well), you could try adding some instant

coffee powder instead. I don't know if you'd have to

dissolve it in liquid first?

I had a piece for breakfast this morning with sliced

pears on the side---it was great! (if I do say so

myself, ha ha ha)
