I buy them already prepared at the grocery store and then just pop them in the oven to cook. I am also having rice that I cook in chicken broth instead of water and add tiny chopped vegetables that I saute in olive oil and then dump the rice in to fry a bit and mix with the veggies. As well, I am having steamed broccoli and a caesar salad that I make the dressing for. I also add a couple of chopped eggs and turkey bacon bits. There may be a few bad things in it but not too many. And for dessert, cut up fruit with a little cranberry juice poured over it. That is my company menu. Don't ask when I am cooking for myself, it could be anything. Guest guest Posted March 16, 2005 Report Share Posted March 16, 2005 Actually, I was tired of steak and veggies so I browned a pound of ground beef in olive oil and garlic, threw in some chopped onion, chopped portabella mushroom, rice pasta, tomato sauce (Bertecelli's--a few avoids), Basil, Oregano, powdered garlic, seasalt, and cooked it all together. I broke my nose on Monday morning, so it's been nice to just heat up the soup instead of cooking. I used 1 pound of ground lamb. Made little meatballs with chopped onion and Italian seasoning, browning those in a little olive oil. I used beef broth, a can of drained great northern beans and red swiss chard, just adding the chard near the end of cooking. I added garlic salt to taste. The brand I use also contains parsley. I was going for something along the lines of Italian wedding soup, but with lamb. It's pretty good, but could use a few more veggies in the broth. This is a pretty complete meal with just a few beans in each serving, not too heavy on the starches. I've typically not been much on cooking, but am on a cooking spree lately. I do a breakfast casserole on the weekend. Turkey sausage has quite a bit of fat, and is not the high protein turkey recommended, so I try not to overdo. If you eat the sausage regularly, I'd use it according to my taste. With the veggies and sausage, you really don't get a bite of egg. I did take Alleve to reduce the inflammation and swelling. I think it helped that I was taking a capsule each of quercetin, cayenne, turmeric and ginger per day. I've used that to keep the bursitis from coming back. I actually don't want it to heal too fast. They'll try to do a closed reduction next wednesday to get the bones back together. That has to be done within 7 to 10 days or they have to rebreak it. I may end up having to have more surgery anyway. There's also a deviated septum. It may be a while before I can tell if that's going to cause a problem. I don't think this simple procedure will fix that. I really had minimal pain, considering. There was a lot of blood. Guest guest Posted April 27, 2007 Report Share Posted April 27, 2007 Leftover GF low carb pizza (mushrooms, bell pepper, salami, and pepperoni). My hubby and kids get the good high-carb crust pizza. If you are cooking for one, you can make small pizzas  ahead and freeze them. I’ve had the recipe on this list before, but let me know if you want it. I always keep some Amy’s frozen entrees in the freezer for those nights I don’t want to cook. Another new GF product on the market is Organic Bistro. They sound really good and nutritious with lots of veggies. Their entrees are things like Chicken Citron, Ginger chicken (with green tea glaze….), Wild Salmon, Savory Turkey, etc. They are new and I haven’t figured out who carries them yet. They sent me some coupons and brochures. I look forward to trying them. Another suggestion: chicken curry. I stir fry chicken and veggies (any mix of all or some of these is good: celery, carrots, snow peas, bell peppers, sugar snaps, broccoli, zucchini, bok choy, and greens; chop them in squares or chunks so they don’t stick when you stir fry them), add in some cashews, soy sauce, and brown rice vinegar at the end. Cook up some brown rice, and make a curry sauce as follows: Mix ½ cup of brown rice flour with curry powder to taste (add in extra ginger, cloves, and tumeric if you like). Melt 1 stick of butter in a 2 quart sauce pan. Sprinkle in the flour mix and stir with a fork and heat a couple of minutes on low heat until it starts to thicken. Add in 2 or three cups (depending on how thick you like your curry sauce) of milk or milk-type liquid, stirring constantly. Cook on medium low stirring often until thick. Add in 2 tablespoons of lemon juice (or to taste) and 2 tablespoons honey or agave nectar (or to taste). Pile the veggies over cooked rice, top with the curry sauce, and have a little chutney on the side. I like to make up a big batch so I can eat the leftovers for several days; it keeps well.
