Tonight was chicken salad with celery and potato chips. Not very exciting, but it is hot and we didn't feel like cooking. Tomorrow night I'm going to grill a couple of organic grass-fed ribeyes marinated in black-bean soy sauce, garlic, and basil; oven-baked potatoes with bacon, aged Cabot cheddar, and chives; and grilled asparagus rubbed with olive oil, salt, and pepper. Guest guest Posted April 29, 2007 Report Share Posted April 29, 2007 The recipe is pretty simple for the marinade - about two shots of the black bean soy sauce per steak, mixed with some finely-chopped garlic and basil. Marinade for about an hour, and broil your steak about 5-6 minutes on each side. The soy sauce is the key. I took a photo for easy identification in the field: ;-) http://www.flickr.com/photos/sanbeiji/476789274/ If you go into one of the larger Asian groceries around the Bay Area such as Ranch 99 or Lion Market, look for these bottles. The one on the left is called O'Long, and is a good replacement for standard table soy sauce. The one on the right is Guan Ping brand black bean soy sauce, although you won't find any English on the label. The product translates to " Guan Ping hei dou yin you gao " if you want to ask for it by name. I think these taste way better than the wheat-free brands you usually find at the supermarket. Neither of these are tested for being GF, but I've been using them without any problems for several months. The Guan Ping is very thick compared to traditional soy sauce and has a very strong flavor, so it is better usually for cooking than for table use. This is the one I use for the marinade. The ingredients on the back say " black bean, sugar, salt. " Nice and simple. No soy even. In fact, if I translate " hei dou yin you gao " literally, I think we get " black bean secret sauce premium. " Soy sauce is " jiang you " .
