As I've done many times over the past couple of decades, I'm staying at The Arizona Inn in Tucson. On a recent visit, I asked tentatively if flour was in a recipe. The server immediately knew I was asking about gluten, and told me they will provide GF bread, provide rice from a GF vendor, put together special GF meals, even rewash dishes in a special GF soap! It's always been my favorite hotel, perhaps anywhere, certainly in AZ; now I have more reasons to love it.

Did the choc cake and almond torte say gluten free?

Not to be a downer, but I wonder if wheat flour was

used to coat baking pans. I usually find that at

restaurants that have a flourless choc cake, wheat

flour was used to coat the pan prior to baking. Maybe

with commercially baked items, they avoid this step?
