Hi. We ate at PF Chang's in Walnut Creek last week. I spoke to the Manager about the concern voiced among this group. He assured me that the staff is fully trained and offered to bring out the Executive Chef. My daughter experienced no problems from the items she ordered off their GF menu.

But, as we all know, buyer beware. We must always ask.See what's free at AOL.com.

Thank you for your note and inquiry. We recognize how many individuals

are affected by Celiac Disease each year and developed this menu so our

gluten-intolerant Guests could continue to enjoy the P.F. Chang's

experience. We are very familiar with Celiac Disease and understand the

complications with not adhering to a strict diet. Our Bistro's have

many

procedures in place to ensure the proper preparation of our Gluten Free

dishes. Our chefs clean the woks between every order and we do not mix

ingredients from one dish to the next. Our chefs also use new oil for

every Gluten Free dish that is prepared and our Gluten Free Sauces are

kept in separate trays on the cook line. We have recently implemented

even more precautions to ensure our Gluten Free Guests are confident in

the preparation of their meals. We are now using red plates in our

kitchens which will identify the dish as Gluten Free. The dish will be

kept

on the red plate all the way down the cooking line to ensure that

everyone is aware of the allergen associated with the dish. This will

also

help to ensure no cross contamination and that the proper ingredients

are

used in the preparation of the dish. Once the dish is prepared it will

be served on a P.F. Chang's logo plate. We have recently introduced new

plateware in our restaurants. However, Gluten Free dishes will remain

served on a P.F. Chang's logo'd plate. I hope this information is
