Guest guest Posted February 9, 2007 Report Share Posted February 9, 2007 I am the same way - I am 100% off gluten of course, I have to avoid dairy unless it is lactose free, and I don't have as much of a problem with soy but I try to not go too overboard on that front.It was hard for me for a long time, but I've gotten quite used to the diet now. The only thing that is upsetting is if I mistakenly consume something wrong, and then have a reaction. But by now I've found plenty of substitute foods. For the dairy thing, I personally seem to be fine with taking two or three lactase enzyme tablets if I'm about to eat anything dairy-ish like cheese or milk chocolate. I buy lactose-free milk which you can get just about anywhere, and Bryers makes a lactose-free ice cream which is usually available at Whole Foods. Guest guest Posted February 9, 2007 Report Share Posted February 9, 2007 I’m almost soy free – I occasionally have some wheat free tamari or Bragg’s aminos. I think of the gluten and casein as rat poison and the things made from them as “sculptures”. For menu planning I try to make a big roast of something on the weekend and then variations on it all week – Roast beef then tacos, beef on salad, with a sauce over rice, etc. That way I do less cooking. Although I do fall prey to Adell’s sausages and homemade sauerkraut when I just don’t want to cook. Or perhaps a hamburger. I have a large freezer and buy a quarter of a beef and a lamb or two and some chickens. I do use a microwave to defrost stuff. I sit down once a week and make menus. I like variety so sometimes I don’t do the Roast plus method and I schedule some different protein every night with at least 2 veggies. I had gotten very tired of cooking about 10 years ago and we has started eating out a lot and then diagnosis and I’m back to it, but now it seems I’m doing it for me and my health and charged up again about how to eat creatively, as a gourmet with out gluten or casein.
