Generally if I ingest a large dose of gluten (accidentally, usually at

restaurants) I am extremely ill three and a half hours later. If I

have a smaller amount, or trace amounts, I may notice symptoms that

night or possibly by the next morning. I have the impression that most

sources of quinoa are fairly pure, at least the packaged ones... I've

not reacted to them myself. Why did you suspect the quinoa specifically?

I am one of those who has a delayed GI reaction to gluten. If I get

glutened, about 18-36 hours after injestion, I get really horrible gas

with intense pain, followed shortly by hours of diarrhea. I've

started to notice that those symptoms are often preceeded by extreme

tiredness and depression.

Could it be possible that you were reacting to increased fiber

intake? Quinoa has a lot of fiber. Injesting a lot of fiber when you

are not used to it can cause some of the same symptoms as being

glutened.

I get the same thing.....it's horrible. I had thai food friday nght and didn't react until this morning (sunday)! Same symptoms as Ruth Anne's. This is very helpful, because it seems people do have delayed

reactions. Also, it could be the fiber, so I'll watch out for that!
