If I have a smaller amount, or trace amounts, I may notice symptoms that night or possibly by the next morning. I have the impression that most sources of quinoa are fairly pure, at least the packaged ones... I've not reacted to them myself. If I get glutened, about 18-36 hours after injestion, I get really horrible gas with intense pain, followed shortly by hours of diarrhea. I've started to notice that those symptoms are often preceeded by extreme tiredness and depression. Could it be possible that you were reacting to increased fiber intake? Quinoa has a lot of fiber.
