Guest guest Posted September 12, 2007 Report Share Posted September 12, 2007 Maltodextrin must be the ingredient that is most confusing to celiacs - I know about it and I still get confused sometimes. Here's the deal: In the US, since the food allergy labelling act passed, Maltodextrin is always made from non-gluten grains (usually corn) EXCEPT when its listed on the package clearly as " wheat maltodextrin " or " maltodextrin (wheat) " ... So you're safe eating American foods with maltodextrin in it when it doesn't specify what's in it - But obviously, you're right that when it says " wheat " it's not safe.
