The dietician should be on top of it, but he or she isn't always around. Your nurse is your best advocate. At UCSF last week, after some false starts, I finally got a very nice GF meal -- with a whole wheat roll! H. Our GI doc says she's written the order for some of her patients and the hospital doesn't do it.
