Here is the recipe for the delicious Brazilian cheese bread that can be made

into rolls or

pizza crust. This is from my favorite Celiac forum which is abundant with

information

and great people IMHO: http://forums.delphiforums.com/celiac. The recipe is

from a

woman named Mireille who is a wonderful chef and restaurant owner in Canada.

She

(and others) have posted hundreds of great GF recipes. Don't miss her great

easy

pudding cookie recipe too.

CHEBE BREAD

1/2 cup oil

1/3 cup water

1/3 cup milk

1 t salt

2 c tapioca starch

2 eggs

6 oz parmesan cheese

Boil first group until foamy. Can microwave. Add this to tapioca and mix well

with

wooden spoon. (Stir a long time.) Will make a white ball. Rest 15 minutes.

Add eggs

and cheese and mix. Will be gooey and sticky mass. (You can also do this in a

heavy

duty mixer like a KitchenAid but I don't have one.)

Cover hands with more oil and roll into balls or used greased scoop and bake on

parchment lined cookie sheet. Bake at 375 for 15 - 20 min until begins to

brown. (I

like it best when I scoop them into mini muffin tins and freeze before baking.

When

frozen I put into a ziplock and keep in the freezer. Then I take out what I

need and bake

a little longer from frozen state.) These rolls are gooey/chewy in the center

when done.

Can use this dough for pizza crust, calzones, or bread sticks. Adjust baking

time as

necessary.

I've made these several times, using about 8 oz of sharp cheddar

cheese instead of the parmesan. They turn out great! These rolls were

a fantastic hit at the family holiday dinner. I made a double batch,

and there were no leftovers!
