Hi Joe and everyone else-

I'm not familiar with the Napa area but your post reminded me there

is

a Culinary Institute of America campus and restaurant up somewhere in

Napa. I grew up close to the main campus in upstate NY and was

curious

as to whether they had a gluten-free menu at any of their restaurants

(which are run by the students). I didn't find one, but I did happen

upon an intersting blog post about celiac and the need for

restaurants

to accomodate gluten free offerings and the role of culinary schools

in doing so.
