Try looking up “socca” –this is a very similar to a pizza dish using a garbanzo bean flour crust. Toppings are NOT dairy and are frequently topped with a drizzle of olive oil or even aoli. There was a shop in Berkeley (closed now) that made them – the chicken and artichoke hearts was very very good. They even had a salt cod version but that was a bit extreme. Cooking is tricky because of the non-dairy cheese; in my oven it cooks well at 360 for 10 minutes then put it on broil for about 3 minutes (it may need to be raised up to a higher shelf in the oven), watching carefully and turning it a couple of times. I do tend to shy away from soy as well – it came back in a test that the mainstream doctors don’t like as a trigger. I have not completely removed it from my diet nor have I tested it with attention, but I mostly only use fermented soy products (GF soy sauce). So I’ll stick with my homemade soccas.
