– it is the casein, not the lactose that bothers me – migraines and

results similar to gluten.

Try looking up “socca” –this

is a very similar to a pizza dish using a garbanzo bean flour crust.

Toppings are NOT dairy and are frequently topped with a drizzle of olive oil or

even aoli. There was a shop in Berkeley (closed now) that made them –

the chicken and artichoke hearts was very very good. They even had a salt

cod version but that was a bit extreme.

Amy’s makes a vegan rice crust pizza that is really

killer. Even my kids like it. It is the spinach rice crust

pizza. Cooking is tricky because of the non-dairy cheese; in my oven it

cooks well at 360 for 10 minutes then put it on broil for about 3 minutes (it

may need to be raised up to a higher shelf in the oven), watching carefully and

turning it a couple of times.

months - they

may be able to recommend someone in Berkeley.

I'm nearly at the end of the modified elimination diet. I do not plan

to re-introduce gluten anytime soon (if ever) but so far the only other

things that appear to be bugging me are citrus and dairy. I am hoping

these go away the longer I am off of gluten as I'm convinced gluten is

the main culprit.

PS I am really bumming that I may have a dairy issue too. My husband

and I have been on the elimiation diet together and he is fine w/

dairy. We just ordered a bunch of Lou Malnati's crustless pizzas which

arrive tomorrow - something tells me I won't get to eat any of it :-(.

Looks good! I do tend to shy away

from soy as well – it came back in a test that the mainstream doctors don’t

like as a trigger. I have not completely removed it from my diet nor have

I tested it with attention, but I mostly only use fermented soy products (GF

soy sauce). So I’ll stick with my homemade soccas.
