Some miso contains wheat; some doesn't. I can't remember which types, from which parts of the country. I believe white miso is GF, but I'm not sure. I'm not where I can be on a computer enough to research it, nor do I have my Japanese cooking books with me. You should be able to find out on-line. I'm envious -- I'd love to go back. I did find I was awfully tired of salty foods by the end my one trip, though!
