We use " natural " casings which are from animals but we're not ambitious enough to clean our own. Tho we did try it once the process is much too time consuming. New York Style Sausage made in Palo Alto say that all of their sausages are gluten free. newyorkstylesausage.com They also are free of msg and preservatives. There are so many additives and bad oils and unknown things used in restaurant and prepared foods. So the answer is: sausage is totally allowed, but you'll have to make it yourself (I told you about the breadless " Nourishing Traditions " sausage I make) or buy it from someone who is a very special sausage maker. You can be sure that a restaurant is going to buy the most cost effective (read processed, processed, processed) sausage they can find. You will not be able to determine anything from your server, they will not know what is in the sausage. I think your best bet when dining out is to order complete cuts of meat or fish... like a filet or a chop. You can make broccoli rabe and sausage at home that will be better for you than anything at a restaurant. I have learned to do my meal-time entertaining at home. Invite your friends over for dinner. They can help cook, even. But you'll know that you can eat something and you'll have a meal with friends. That's the best way I've found. I know you are having a struggle with the whole cooking component of this diet, but if you take steps towards it, a bit at a time, you will be able to cook delicious foods in a short time. Maybe try one new recipe every few weeks. Pick a cut of meat or fish you want to have and look for internet recipes that sound good and you can adjust for the diet. Soon you'll have a repertoire of meals that you love to eat. Also, maybe break it down into meals: like figuring out a delicious breakfast or two, then some soups/one-pot meals, and then some great sauteed meat meals or roasts.
