I e-mailed both the founder and president of Armadillo Willy's asking them if they had any gluten-free items on their menu and explained how much my family and other celiacs would love to be able to eat at their restaurant. The founder of the restaurant e-mailed me back that he checked out gluten on the internet, and it was a bit more complicated than he thought. He also said that he would investigate it more and contact his vendors and asked me to send him more information. I e-mailed him explaining the issues of cross-contamination, hidden gluten, and wheat in soy sauce if soy sauce is one of the ingredients in their barbecue sauce, etc. I attached GIG's Gluten- Free Restaurant Awareness Program brochure and told him that other restaurants like Outback are members of this program. I also gave him names of other restaurants who have gluten-free items listed on their websites or have gluten-free menus. I could not believe it when he e-mailed me back saying he was going to contact the Gluten- Free Restaurant Awareness Program for further information! I also said that some of his menu items might already be gluten-free and maybe some of the other menu items' ingredients could be modified slightly in order to become gluten-free. I told him that it is not simple to do, but it cannot be that complicated either! This would be great if he follows through and becomes a member of the GFRAP! I will keep you updated.
