Guest guest Posted January 9, 2008 Report Share Posted January 9, 2008 My husband Jim was diagnosed with CD last summer, after being hospitalized with severe diarrhea, dehydrated and with kidney failure. He came back positive on all 3 blood tests, and also had a camera endoscopy. The GI specialist thinks that a biopsy is NOT needed given the response to the blood tests. He is fine now, but had a minor set-back when the doc tried to put him back on Benicar HCTZ. I don't think it was any gluten reaction, just that he has developed an intolerance to that drug, and both it's components. He seems to have no other CD symptoms. So we have been doing well with a GF household, for the most part. He's always taken his lunch to work, and seems to like the bread and other products that we can make GF. We never have used many processed foods in cooking in the first place, so to switch to rice pasta (can't stand the quinoa!) isn't a problem. I found a reference to the Italian chain Carino's Italian Grill having a GF menu, and found it on their website. But I stopped in at their restaurant in Gilroy yesterday to just ask, and bad news is that the manager has never heard of them having a GF menu. So don't believe what you read on the internet, not even on the company's own website. I plan on contacting the company with a complaint. Anyway, we live just north of Salinas, and are having good luck shopping at Whole Foods (altho they haven't lately had their house-brand corn bread mix in stock) and TJ's. And I bought a case of Bob's Red Mill bread mix for the machine from Amazon. 8 packages, free shipping and about a dollar less a package. Amazon has a nice selection of product, but I like to try things before I buy in quantity. And who suggested using those great TJ's ginger snaps for a cheesecake crust? What a great idea! I also thought I'd share a find - although most likely quite a few of you already know, and I'm just lagging. Glutino has the most wonderful 4-pack of frozen pizza crusts. They literally taste like a fresh non-greasy Pizza Hut crust - kind of similar to chebe, with a crisp chewy outside and a soft fluffy inside. Also, Glutino do a flaxseed bread that will actually crisp in the toaster. Shocking! It's so funny how everyone has different favorites- I didn't care for Glutino frozen pizza crusts (also don't like their mac and cheese). I guess I just don't want crisp chewy outsides and fluffy insides! lol. I like homemade GF products best, though, so it's really hard for the prepared stuff to compete.
