What about working to create a GF co-op or buyers club for celiac folks in your area. Perhaps you could go through one of the already existing co-ops like United International Foods (formerly Mountain People) or possibly Falcon trading Co? OR you could have one of the more GF friendly health food store coordinate a co-op? I don't know all the details on how to do this, but it seems like an idea beyond its time. Just my two cents!
