For example, aged cheddar has far less than, say, fresh mozzarella. H. If it does turn out that I have celiac disease, that would be encouraging if at some later point I could return dairy to my diet. I know some of the other dietary restrictions are permanent, but the combination of all these things together is proving to be exceedingly challenging. Thanks for the info.
