Brazilian Cheese bread co pizza - where?

Hi --

I have looked in many stores trying to find the Brazilian Cheese bread company's pizzas with no luck. I've found their yummy cheese breads (at Molly Stone's Palo Alto), but that's it. I've asked them to order the pizza, but no luck yet. If you've found the pizza, where did you find it?

I've only found it online. It's wonderful, but they've just changed to their " summer " shipping. I wanted to order $35 in product,and shipping would have been $65. And it goes up, the more you order, so there's no doing a group order. Too bad.

Here is the basic recipe. Making it into

pizza dough is just how you roll it out and what you put on it:

Cheese rolls (Pão de

Queijo)

Cheese rolls (Pão de Queijo) are eaten all over Brazil at

breakfast or as a snack. Traditionally, these are made of cassava flour instead

of wheat flour. Except for that, these cheese rolls consist of eggs and cheese.

If served warm, these rolls are crispy from the outside with soft dough on the

inside.

Ingredients

500 gr (1.1 lb) of fine cassava flour

1 large cup of milk

4 tablespoons of sunflower oil or soya oil

generous pinch of salt

4 eggs

200 gr (7 oz) of grated hard cheese (like

Parmesan)

Preparation

Preheat oven at 180ËšC (gas 4-5 or 350°F).

Sieve

your cassavaflour if it is not fine. Bring the milk with the oil and the salt

to a boil in a pan. Add the cassava flour while mixing. Allow to cool after it

is mixed well. Next, stir in the eggs one by one and then the cheese. Mix well.

Grease

your hands with some sunflower oil and form the dough into small balls. Put

these in the oven on a non-sticking baking sheet. Bake for 25-30 minutes. The

rolls smell nice when ready. To be sure, test for doneness with a fork: if it

comes out clean the cheese rolls are ready. Allow to cool sufficiently but

serve warm.

I’m going to try it dairy free too

by using coconut oil and milk and not adding cheese. I got some cassava

flour from a little “stop and rob†convenience store in San Pablo that happens to

stock Brazilian staples. I’ll let you know how it turns out.

I forgot to mention that you can use

tapioca starch (same plant, just more refined)

Another recipe (google “Pao de queijoâ€)

uses

1c water

1c milk

½ c oil

1 tsp salt

450 g of tapioca starch

3 eggs

200 g of grated parmesan cheese

I'm pretty sure they are at the Grand Lake farmer's market in Oakland

on Saturdays, so you contact them to find out if they sell the pizzas

there, or would bring some for you.

That's too bad! I hope some stores start carrying it. They will if enough people ask. Thanks for the information!
