Her website is http://bewitchingelegance.com/ She is in Burlingame. Under the 'questions' section of the website it states that she can do any of the cakes gluten-free, and it lists the gluten-free flavors she offers under the 'flavors' section. Hope this helps! Guest guest Posted June 26, 2008 Report Share Posted June 26, 2008 I have a couple of ideas for you... for my wedding a few years back, I had the baker (in rural Colorado) only make the very top tier GF. In fact, since we wanted chocolate cake, I provided him with a GF mix that I already knew I liked (Dutch Chocolate by Dowd & - made of chestnut flour). Then he made the other tiers from scratch, and frosted them all the same. With the top tier being pretty small, that might make it more feasible? The only glitch here was that I forgot to tell the waiters that not all the tiers were equal and they actually gave out nearly all the top tier slices before I got one! (Luckily everyone said it was great...) Another idea is that having cupcake wedding cakes has been quite a popular trend lately. For example, look at this beautiful cupcake tree: http://www.westchester-weddings.com/images/Cakes/amys/cake4.jpg Here you also have the option of making most of the cupcakes " glutenous " and only a select few GF... but having matching frosting could make them all look uniform... Guest guest Posted June 26, 2008 Report Share Posted June 26, 2008 What we did for our wedding was have the whole thing made according to a GF recipe (Carol Fenster) by our venue's pastry chef. I met with him and he picked the recipe out of several, I brought him the flours and GF ingredients, and then he made the whole thing gluten-free. It was very important to me to have the entire meal gluten-free. Everyone liked the cake- it's all about the frosting anyway, right? With more dietary restrictions it is a bit trickier, but I bet one of the GF masters (Hagman, Fenster, etc) has a good allergen-free recipe. I think the chefs usually freeze the cake beforehand and use supports etc. so it might not make that much of a difference, but then again, it might depend on how huge of a cake you're having them make. You could also do a bunch of little cakes, or, as one member suggested, cupcakes. Hope this helps! I know it is far away, but Da Vinci GF bakery in Seattle makes gorgeous cakes- you might call them and see if they could either ship one or have any recipes. We had the Vanilla cake and the bakery we used had no problem with us supplying the cake mix for them and they were intrigued by the brand so much that they now offer wheat free cakes. Because our wedding was small we only used the gluten free cake but if you have a larger wedding I like 's suggesting of having the top layer only the gluten free but make sure the servers know about it.
