The host was really clear - he said that EVERYONE around here makes teff out of wheat flour. He said that there's no restaurant around here that uses only teff. At the time, he added that no one had been able to import teff for about 3 months, there's been a problem with getting it, so if anyone said they don't use wheat they're not being truthful. But that was a while ago now, so it could have been resolved - still, he said all restaurants generally use wheat flour to make injera. The host also went *totally* out of his way for me - he ran across the street to get a bag of rice, and cooked up some rice to go with the food.
