Guest guest Posted April 14, 2008 Report Share Posted April 14, 2008 1 c teff flour ½ c kefired apple cider (or equal amount of water + 1/2 tsp (or so) dry yeast) ½ tsp salt Water to make a batter like consistency Allow to ferment (so make this in the morning for cooking that night or earlier if you like it even more sour) Stir down (so put it in a bowl that is big enough for double the volume) Pour in a spiral motion on to a hot (perhaps greased) griddle to the size you want Cover with a pot lid (sizes all relative) Cook until the bubbles appear and the color changes and it gets dry around the edges or so Fold and remove to damp dish cloth covered plate Separate each succeeding injera with the dish cloth Or put directly on serving platter and cover with spicy stew Serve extras on the side to dip and pick up the solid bits in the stew Connie From: [mailto: ] On Behalf Of hosnar Sent: Monday, April 14, 2008 10:55 AM Subject: [ ] Injera Recipe (was Re: Teff) Connie, Do you mind posting your injera recipe?
