I love her cookbook (mostly for the beautiful pictures) and the many other raw foods un-cookbooks that I have used. I have been moving towards raw foods for the last year and also love having Cafe Gratitude for a safer place to go to with friends. I can't say enough about how much better I feel eating that way. I just did a raw juice feast for 16 days and my blood sugar was the best it has been in many many years. The most amazing thing with this raw food way of eating is that the more I do it the less I feel sick (as in having to always think about having celiac). Instead I feel that I am making choices to be healthy at each meal not that I am always one bite away from getting sicker. I don't know if you all can understand what I am talking about but is is a very different mindset. Thanks for posting about Roxanne's food. It is a difficult time to introduce an expensive line of food. It is more expensive to use organic veggies and I am sure that they don't have much shelf life either which adds to the expense as well. I will look for them soon to support her efforts. Maia PS Note from your blog about making a zucchini lasagna: I made a killer raw zucchini mushroom tomato lasagna a few weeks ago. Guest guest Posted May 5, 2008 Report Share Posted May 5, 2008 It is so cool to hear that Celiacs are having success with Raw Foods.I have also been moving towards raw foods recently and have been noticing marked improvement in digestion, decrease of incidents in feeling really sick after eating out, and really improved blood sugar. I love Cafe Gratitude because I am also dairy and sugar intolerant. This is the only place I can go and eat pizza and ice cream with a clear conscience. When I first got diagnosed with Celiac 2 years ago my digestion was so poor that I could not eat raw vegetables for about two months, and then I slowly re-introduced little bits of raw veggies.
