I'd just substitute in your favorite gluten-free flour blend for the flour and use a dairy free oil/fat and substitute a dairy free milk (Rice, soy, almond) OR sparkling soda for the milk. you can add a small amount of xanthan gum if desired. -BRenda > > For my birthday in June, I'd really like a red velvet cake. Then you can add in the cocoa powder and food color to make it a traditional red velvet cake. I’m not sure how to simulate the buttermilk for DF, maybe the rice/soy milk + vinegar.
