I just invented a grain-free, fat free, almost

sugarless chocolate cake. It was pretty good, but I

think next time I'll add more cocoa powder. Walnuts

would be good, too. This would make a GREAT base for

an ice cream cake. I didn't really measure the

ingredients, but here's a rough idea:

..5 c. applesauce

2 eggs, separated

3 T. tapioca flour

..5 t. salt

1 t. baking soda

3 packets of Stevia

1 T. sugar

1 t. vanilla

using an electric hand mixer, mix applesauce, egg

yolks, tapioca, salt, soda, sugar and vanilla until it

is smooth, like cake batter. Add Stevia AS you are

blending, to avoid lumps. Set aside.

Whip egg whites until stiff. Fold into batter.

Pour into greased pan (I used a small, 8x4 loaf pan)

and cook at 350 for about 45 min, or until toothpick

comes out clean. Enjoy!
