Guest guest
Nutritionists who are conversant with CD are few and far between. Before you go to the trouble of traveling to get an answer, you may want to explore other possibilities. The first would be to investigate the possibility that you are being exposed to gluten from an unsuspected source. To help us know what would help, can you give the list a bit more information on your level of knowledge and experience with the gluten-free lifestyle? It would also help to know how long you have been off gluten. One thought that comes to mind, considering that you are overseas, many countries consider wheat starch to be an acceptable food for celiacs; if you are eating those products that could be a source of trouble. Beyond that, you may be one of those who reacts strongly, especially during the first few years of healing, and needs to be extremely careful of any source of gluten, no matter how minimal. This could include breathing in burnt or airborne gluten (from toast or other gluten-containing product made by a family member), handling food that contains gluten (including pet food), or gluten from non-food sources (hair or skin care products, cosmetics, supplements, medications). Another possibility is that you may be sensitive to other foods other than gluten (soy, dairy, corn); if this is so, you will probably be able to reintroduce those foods to your diet after avoiding them for a year or two. These are the first issues to look at; when you let us know a bit more, we can probably zero in a bit more specifically. I'm thinking of flying " home " to the Bay Area to try to locate a nutritionist that can help me unravel the mystery of why, despite avoiding what I know is harmful, I continue to get sick.
