Same here. I had pneumonia many times as a child and have received

antibiotics too many times (I haven't used them in five years now.) I use the

pearls put out by Enzymatic Therapy, and find them excellent.

Here's some interesting information on probiotics and why it's best

to make your own kefir or yogurt rather than take pills.

" Fermenting is Fun " - a positive article about fermentation.

However fermentation has some associated problems as well -

depending on the micro-organisms involved.

Fermenting vegetable produce is a common way of making it taste

good - as seen in soy sauce, tempeh, miso, cheese, etc.

Unfortunately it appears that this generally works by producing free

glutamate. Free glutamate is a potent nerve toxin - in addition to

making things taste great.

http://www.truthinlabeling.org/hiddensources.htm lists a variety

of ingredients as problematical, on these grounds. One of the

items described as " these OFTEN contain MSG or create MSG during

processing " is: " anything fermented " .

While fermentation doesn't *always* produce free glutamate, I

believe this is a matter of some concern for many of those who

like fermented vegetable products.
