Another Brownie Mix Flop

I just tried to make a box of Cherrybrook Kitchens brownie mix and followed the directions to the letter (I even have an oven thermometer so that I know my oven was at the exact temp) but it was a total flop. :( The edges came out perfectly, but the middle never solidified at all! I finally cut off the edges and put just the middle back in the oven for another *20 minutes* and finally, it cooked. Total cooktime to get the middle baked was 32 minutes, when the box said 12 minutes!What happened? I have always had problems with the recommended cooking times on just

about every thing that is gluten free that I try to bake. As with you I

have a thermometer in the oven and it always reads very closely to the

correct temperature. Although I have found that when the warm up timer

says it is up to temperature it usually needs an additional 5-10

minutes. I always check what I am baking at the suggested time and then

go in 5 minute intervals with rechecking. I do not remember cooking

anything that hasn't required at least an additional 5 minutes but it is

usually closer to 10-15 minutes.

Cooking times listed on products are for perfect conditions. Altitude,

Temperature and Humidity play an important roll as to how long something

takes to cook. Don't be discouraged just because something needs longer

cooking time. Also remember that most gluten free products should only

be mixed just enough to blend and cooked right away without sitting. So

always have the cooking containers ready and the oven heated before you

mix the ingredients together.
