I have about 50 posts from her (all were worth keeping!), so I'll have to go through them gradually to extract the material that might help you. If she's monitoring this list, and she has time, she'll probably add a few items from time to time. Enjoy. Ed Raw vegan sushi... I've made it quit a few times now, each time is a little different. But my favorite was with a combination of sprouted quinoa and barley (easy to sprout, 2 days). I've also used sprouted wheat berries. You begin by placing the nori on the nori roller. I spread a little tahini on the nori to start. Really made a difference. Then spread the grain in a thin layer, followed by 2 or 3 of the following : finely (very finely) sliced lengths of carrot, zuchini, cucumber; shredded beet; marinated shitake mushrooms;I like sunflower sprouts; and avocado. You can be as creative as you want. I found that more than 4 ingredients in any one roll was to muddled. Roll it all up, and seal the nori with a little umboshi paste. Dip in tamari, wasabi, and savor with a little sushi ginger. A great hit... This page has great pictures on how to roll sushi.
