Guest guest
, You give a wonderful description of the new frontiers and taste adventures awaiting someone who leaves salt behind and discovers the subtler tastes that it was masking all that time. I find some lettuce to be incredibly sweet. I sometimes wonder if sweet and salty are flavors to naturally explore as children along with our toys and our tantrums. Growing up can mean dropping many of our childish ways: it seems natural and appropriate for adults to begin exploring the bitter and sour. I am often surprised at how rich some bitter tastes can be like fresh roasted coffee, fresh green tea, etc. S Pollock Robt wrote: I think there are other aspects of salt intake that suggest natural restriction is a good idea. One in particular (in my option) is the strange addiction to the flavor that seems to permeate much of American culture. (I know that there are other cultures that consume salt to a hugh level as well). Food marketing generally isn't concerned at all with your health--they could care less--but with moving their product. And because our senses have been bombarded with extremes in just about everything, including taste, we seem to want more and more strong flavors. It is like a strange addiction, and the two big culprits in my mind are SWEET and SALTY. Hey, almost everybody I know like a good plate of Latin food or a bowl of ice-cream. Both more in the extremes of SALTY or SWEET. CR moves me in the direction I want to go, and if sodium restriction lowers my blood pressure, even if a little, I am willing to brave the hazard. In any case, I have discovered that when I am hungry (and I have been that A LOT lately), even a plate of raw salad has flavors that I missed. I already know I am a sugar addict, (among other things). Have you ever tasted how sweet a steamed beat is? WOW. Have you ever tasted the bitter/salty flavor of a stick of celery? Because I eat less, I find that I enjoy what I eat more, and my goodness have I missed a lot! Strange, but I am beginning to look at some foods (like a bowl of tamale soup) and get a wave a distaste. I didn't know this, but in my memory, barried deap away, I recall eating such things and feeling sick afterward. And, I have noticed repeately that after I eat my food choices now, I don't have those feelings at all, but feel very much even keel and stable, sometimes with a spark of additional energy. Such experiences are causing my committment to CR to deapen.
