My dd is anaphylactic to dairy & she has never had a problem in case your concern is allergy related. Casein is only in milk and unless milk cultures are used somehow--which is not out of the question---they are used in hot dogs, salami and so many processed foods where you'd never dream to look--except kosher stuff of course. And I do remember the debate and called the company myself and they admitted to the barley culture, Trader Joe brand is not made with barley cultures and is said to be gluten free, so that's the one we buy since we are both gluten, casein free--and actually soy, and corn, and egg,--FREE and more ...
