I have made the Walford's buckwheat pancakes as well as the store bought Aunt Jemima whole wheat mix. The nutritional values are not that much different between the two. Of course I use egg whites and skim milk to the AJ mix, plus a bit of wheat germ. I have also substituted unsweetened applesauce to the AJ mix in place of olive oil although I do use olive oil occasionally which boosts the fat content to 20% but is mostly monounsaturated fat. Since I have two young girls (6 and 8) I have two separate frying pans going in the mourning, one usually buckwheat for my wife and myself and the other AJ. I also have been CRON challenged by the 6 year who asks " Daddy, why can't we have chocholate chip pancakes? " . SO the kids batch have about 8 chips per pancake in it. The adults pancakes I place frosen or fresh blueberries into each pancake after I first place it onto the grill. We have also found commercial no sugar pancake syrup (something like 30 calories per 1/4 cup). Complement the meal with 6 oz of OJ, fresh strawberries, or a small banana and I find the meal quite nutritious and delicious. Not every meal needs to have 80% of the RDA's. One observation, the buckwheat recipe tends to keep me filled up all the way until lunch while AJ leaves me reaching for some fruit arrounf 11AM.
