The highest monocyte adhesion was obtained during the PUFA(n-3) and SFA dietary periods. In conclusion, an MUFA-rich diet benefits plasma lipid levels compared with an SFA-rich diet. Furthermore, this diet results in an increased resistance of LDL to oxidation and a lower rate of monocyte adhesion to endothelial cells than the other dietary fats examined. " First look at the diets: http://atvb.ahajournals.org/cgi/content/full/16/11/1347/T1 Notice the low 18:2 intake (9 % of fat intake) for the SFA diet. Now look at the 18:2 fatty acid level in the LDL CE (Cholesterol Esters - fatty acids hooked to cholesterol): http://atvb.ahajournals.org/cgi/content/full/16/11/1347/T2 Notice the 18:2 is 52.5 % of the fatty acids in the LDL CE, yet it is very low (~ 9 %) in the diet. Strange? Confused where the extra 18:2 came from? No not really as they probably filled the subjects fat stores with 18:2 before the tests. You see most folks don't consider the type of fat being released from the fat stores as being in the diet, but bet your bottom dollar it is! Interesting they did the SFA test first, then MUFA so fat stores of 18:2 would have been at the peak during the SFA and lower in the MUFA trial. Have a look at the 18:2 LDL CE data and you see that is what happened. Then they pumped up the 18:2 fat stores again during the PUFA-6 and it carried over to the PUFA-3 diet to make the PUFA-3 look bad. It worked! It really burns me up that there is such crap science being done.
