Of course it's so good it's hard to let it sit that long without eating. 2. The pudding keeps gelling the longer it sits, so you can use less guar gum (for those interested in economizing) if you're not in a hurry. While I need about 3 tsps of guar to a pint or so of water if eating sooner, I can get the same gel with 2 tsps of guar if it is going to set longer, at least overnight, or better yet, for 2 days. 3. I have made so far: chocolate, lemon, coffee and vanilla (use 1 tsp vanilla extract to about a pint of water). All scrumptious. Just call me the pudding lady!
