When I make this extremely low cal salad, my husband can't keep his hands

off it. Fortunately there's no fat and you can eat a ton of it without

adding any cals of any significance:

3-6 cucumbers

chpped onion

vinegar

sucralose

dill and garlic to taste (optional)

Slice the cucumbers in circles. Chop the onlon. Combine all in a big pot,

Add about a cup of vinegar and enough sucralose to get a sweet/sour taste

(about one monkey pod spoonful). Add the dill, and some chpd garlic if

desired. Chill. Every holf hour or so mix the cucumbers around so they all

marinate. The longer the flavors marinate in the fridge, the better it is,

so waiting several hours before consumption is most desirable.

My wife made this over the week end with a variation. We like spice so she

added a jalapeno plus a tablespoon (or so) of Thai chilli sauce.

One comment. Becasue of this is very acidic, one should use a plastic or

glass container for this rather than a metal pot or bowl.
