They take longer to cook, but have a chewy texture that makes up for the time you have to spend waiting for them. Make a bigger batch on a Sunday morning and save some for one, or more, day/s the next week. Combine: 4 Cups non-fat milk and 1 Cup steel cut oats in a saucepan. Add 1/4 tsp. salt, if you wish. Cook over low heat for approximately 20 minutes. Stir frequently to keep it from sticking to the bottom of the pan and burning. Serve up a reasonable amount and add whatever you want to make it special for you. I like dried or fresh fruit, nuts, a dash or two of cinnamon, sweetener (depending on sweetness of fruit). Refrigerate the remaining cereal which can be nuked later. If the cereal is exceedingly stiff, add a little water to make it more palatable. Dry milk can be added to the 4 C. of liquid n-f milk to 'sup[er] it up'. I don't have any of the food values for steel cut oats, but I would imagine they are close to the values for rolled oats. Oat bran has the advantage of providing fewer calories (76) for a 1/3 Cup raw serving size but 4.8 gm of dietary fiber while rolled oats has 104 calories and only 2.9 gm dietary fiber for the same 1/3 Cup. I let it cool a few minutes to congeal then chop it up with my spoon to make it lumpy. Then I add: 1/2 cup.....Fresh blueberries (frozen won't do, too mushy) 1/2 cup.....Skim milk (approx) Mix slightly then enjoy. 592 calories not counting wolfberries. Then, again, I eat during the day. By the way, my name is Simone, and I'm new to this group. I'm still waiting for my Walford books, but I've been doing my own CR for quite a while. I tried Atkins for a while, until I started losing hair and feeling weak! Also, the amount of sat-fat is ridiculous. Note: Atkins had a heart attack a couple of weeks ago! So I started my own version of low-carb, no sat-fat, high omega, low-cal diet, and I've been doing this for quite a while. The only thing is that I am in very good physical condition (some weights and yoga) and my weight will not move any lower, though I feel better a bit lighter. I am 5'5'' and weigh 109 lbs. I have 10% body fat (calipers method.) I gained a little recently as I started adding more carbs (fiber cereal, oatmeal, more veggies, some fruit.) My digestive system is grateful for the additions, but I get terrible headaches. And my weight went from 107 to 109. Please feel free to e-mail or comment. Thanks. Guest guest Posted May 12, 2002 Report Share Posted May 12, 2002 improvements: ....Cows milk could be replaced by soy milk for lower cholesterol (In your case I'd use Silk - vanilla flavored) - Most supermarkets now sell this - look near the regular milk. You may also be able to find dry in the cereal aisle. ....Quick oats could be replaced by oat bran. This can be a matter of preference; the texture of oat bran is closer to cream of wheat than it is to oatmeal. The fiber content is higher with Oat Bran. I used to enjoy wheatgerm when I was younger. I'll have to start using it again. Ground flaxseed can also be sprinkled on cereal. (Just put some regular flaxseed in a coffee grinder) The flax seed is supposed to be very good for you. I have a recipe that I also enjoy: 1/2 cup......Oat Bran (organic) 1 1/2 cup....Spring water 1 Tblsp......Maple Syrup 1/8 tspn.....Cinnamon Combine oat bran and water in big bowl and nuke for 2 minutes. Stir to mix evenly (oat bran will sometimes cling to the bottom) Nuke for another minute. While cooling, stir in maple syrup and cinnamon. This doesn't make as much as yours, but I'm usually getting lunch four hours later. I've never had wolfberries. I'll be on the lookout for them. Are they like blueberries? When they are in season, I like to mix blueberries with cooked millet and maple syrup. I would definitely try to nail down the source of your headaches in any event. Low carbs is not where you want to go in my opinion. Don't want to over do the omega fats either. It'll make you an easy bleeder (interferes with blood clotting...see main list archives). Walford has outlined a pretty good program and backs it up with science. I think you will really enjoy his books. Read lots of books in the past but after reading Walford, I knew I had finally found " the one " . Welcome to the support group by the way.
