I recently started focusing on eating 10+ servings of 'fresh' vegetables a day. I only put them on my plate, assuming my children wouldn't eat them, and provided other options for my kids. I was even eating tomatoes, red peppers, even slightly cooked onions at breakfast. I figured I would work on their nutrition, once I had a better hold on mine. Guess what? My children started asking me if they could have some of what was on my plate......tomatoes for breakfast? yep. This past week, I steamed a head of cauliflower assuming my husband and I would eat it. My apraxic son pipes up, " I love cauliflower? " (yeah? since when?)He ate a bunch of it. So then, his sister decides she has to have some, too. My find: Having vegetables available, but NOT offering them to my kids resulted in far better vegetable consumption and immensely less headache than telling them they had to eat their vegetables.
