I imagine the recipe would work for other fruit or berries too??? Guest guest Posted July 29, 2002 Report Share Posted July 29, 2002 Sure, but it's really not lo-cal per se (just a bit healthier.) This is just adapted by me from Kimball's " The Cook's Bible " . Double Crust for 9 in deep dish pie pan (halve everything for a single crust pie) 2.5 c whole wheat flour 1 tsp salt 2 T sugar (could use substitute) 20 T (ACK!) Spectrum shortenening 5 T ice water I mix up the dries first in a food processor, then pulse (10 times) to cut in the shortening. Then I transfer it all into a bowl and use a rubber spatula to mix in the water until the dough just comes together. Then divide in half, wrap each ball in plastic wrap and refridgerate for at least 30 min. Roll out after cooling. Filling 6 cups blueberries (or any other fresh berry) 2 tsp lemon juice ..5 c sugar (could use substitute) ..25 tsp allspice pinch nutmeg 4 T Minute Tapioca Mix together and pour into pie crust.
