I've found that I need a different amount depending on the strength of the flavor. I put the flavoring and sweetener in first (starting with 8 or 10 dropperfuls of flavoring) and taste it. Some of the flavorings will do with that much and in fact are too overpowering with more. Cinammon is one such flavoring that's very strong and overwhelming. If too weak with 10 drops, then I add more, up to 20 drops or more for the delicate flavorings if necessary. When I'm happy with the flavor, then, and only then do I add the final ingredient, the guar and blend for the final recipe. BTW I now use 1 cup of skim powdered milk to 3 cups plain water, and 1 TBS guar which makes a more " fluffy " meringue type dish than a pudding. The whole thing whips up in the blender to a fluffy light concoction. It has calories due to the milk but tastes delicious to me and I eat less of it for satiety than the plain guar pudding.
