I second that emotion and hereby refer to the kefir learning curve as the KLC (tongue-in-cheek, knowing how CRONies love to abreviate things.) In the first few days on my KLC, I noticed that I had finally found a food which I could actually make TOO SWEET with sucralose. That's a first. I have a horrible sweet tooth. Like a little kid that puts ketchup on everything, that's me with sucralose. There's nothing quite so disgusting, however, as too-sweet kefir. Backing off on the sucralose makes the kefir almost pleasant, and my sweet tooth is nonetheless satisfied. Also I've learned to add a full serving of fruit to it in the blender, instead of a few tablespoons of fruit. Frozen raspberries have worked the best so far. The next general observation on my KLC was that I really didn't LIKE the stuff, so I decided to stick with it and experiment with it since it just might extend my lifespan. When I'm making every calorie count, it's psychologically difficult to include any calories in my diet for a food that I really don't like, unless the health benefits are immediate and obvious. Fortunately, that is the case with kefir. If anybody has ever wondered why Warren isn't stocking and selling Beano by the case for us at reduced cost, perhaps kefir is your answer.
