I'd thought of brocoli and spinach, and already do a lot of those in my diet. But I honestly never thought of celery and cucumbers as being significant sources of nutrition. (I guess I had them pigeon-holed with iceburg lettuce.) Thanks for the enlightenment and I'll begin to include those in larger quantities in my diet. Also interesting to contemplate the notion that too much of any one food could/would become toxic. The software program that I use to track my calories and nutrition (I use Diet Power) often flags me for too much selenium, so I've learned to check the computer before I eat a brazil nut everyday. Here's what the Diet Power "help" index says about the upper limit of selenium: "In April 2000 the IOM established the first Tolerable Upper Intake Level (UL) for selenium: 400 micrograms per day. Getting more than the UL may trigger a toxic reaction called selenosis, marked by hair loss and fingernail and toenail damage." Just 4 brazil nuts a day would put you well over the limit.
