Jo: A potato now and then AFA calories is fine. It's the stuff people add

to the potatoes that increases the calories (butter, sour cream etc).

Perhaps what you mean is that potatoes are a high glycemic food. In spite

of that, I serve the redskins type several times a week topped with

Spectrum Omega 3 spread, and we eat the skin as well as the " meat " of the

potato. The skin has many nutrients and I find that potatoes have a high

satiety factor.

Whew! That's good to know, but I think we still eat them a bit too much :-0

I try to make them tasty yet not too bad - I bake potato wedges or slices and

sprinkle cajun spice on them, which does include salt in the pre-made

cannisters, but you can make your own with cayenne, sea salt and black pepper.

And for some reason, I have it in my head that the purple potatoes are

healthier, though I can't find any nutritional info specifically on them. So I

get those when I can.
